(American Wild Ale - Wild Specialty Beer - 28C) The beer presents in the glass a hazy straw color with minimal petillant character, even on arousal and with no head. The nose is a melange of cinnamon like spice due to the chamomile, with a vague fruitiness following. The aromatic acid comes across as yogurt-like due to a clean acidity, lacking acetic character. The beer has a nicely controlled funk!. Thereis a hint of vanilla as well, likely an element of oak aging. As it warms, an edge of alcohol becomes apparent. Very pleasant! On first taste, it's apparent that the acid balance on point and quite clean. This lacks the harsh elements of acetic that seem to be ubiquitous in American sours. The chamomile, in concert with the acid, comes across almost like pie cherries, lending a spiciness typical of that fruit, but the pineapple is mostly lost here. Through the finish, it is quite dry and the lactic acidity is soft. I do pick up some characteristics of younger sours, with an oaty note, likely from bacteria in suspension. Very well balanced. Overall, the mouthfeel is a bit lacking, as the body seems a bit bigger than expected and the lack of carbonation accentuates that. Minimal astringency. Overall, this is a great idea of a beer and comes across as a straightforward sour moreso than a "wild ale," as it lacks prominent Brett character. Cleanly fermented and quite refreshing, definitely not a throat burner! I'd be interested to see this with a bit more age & carbonation but a super nice beer overall.
