Galipette Biologique by Galipette Cidre is a French Cider, BJCP Category C1C, is presented at 47o F in a tall thin glass, showing a brilliant, bright amber color and a steady outgassing column indicating sparking conditioning. The nose has a big sweated apple note with sweetness and lightly cooked sugar and caramel notes similar to a great apple pie aroma fresh out of the oven. The flavor is decadently rich with lightly cooked and sweet apple, again with a fairly strong honey/caramel/butterscotch back note through the mid-palate. The finish is medium-full, with a light acid tartness and evident astringency, presumably from some bittersharp apples used in the mix . Body is medium, and I don’t pick up any saltiness. Overall, the balance would put this at a medium-sweet cider.
The sweaty apple nature begs toward traditional longer masceration and keeving; however, I detect no noticeable funky character or phenolic notes that often arise from malolactic fermentation processes. This leaves the cider sweet and fresh with light but balancing fruity tartness, in a quite straightforward and somewhat simplistic form. Fear not, it is surprisingly light and fresh and has true-to-breed cider apple character top to bottom, and while the sweet balance is high, the body, balancing acid, and prickly carbonic note brightens the finish into a lovely fruity treat.
