Dayfall Belgian White by Stone Brewing Co. is being evaluated as a Witbier (Category 24A) from the 2015 BJCP Style Guidelines.
This beer pours an appropriate hazy gold with a white head that leaves a thin stand of fine bubbles on the beer. The aroma features a prominent citrus character up front with a focus on orange and a touch of lemon. As the citrus fades a light bready, and slightly doughy, wheat flavor emerges, along with a very light perfumy coriander. A hint of floral hop aroma develops as the beer opens up.
The flavor also features a moderate citrus character, which is mostly orange and light lemon peel. Medium bready wheat develops mid-palate along with light coriander, low hop bitterness and a hint of floral hop flavor. The Bergamot adds an interesting citrus layer to the beer, along with a light acidic kick. Light residual sweetness in the middle shifts into a medium-dry finish. This medium-bodied beer has a slight creaminess on the palate and high carbonation.
This is a refreshing and easy-drinking beer to be enjoyed as spring continues to develop. It is mostly citrus-forward but there is enough malt character, along with support from the coriander, to create a fairly balanced beer. This is not one you want to age, so drink it fresh.
