Dragon's Milk Triple Mash by New Holland Brewing Co. is a bourbon barrel-aged imperial stout and is being evaluated as a Specialty Wood-Aged Beer (category 33B from the 2021 BJCP Beer Style Guidelines). Specialty Wood-Aged Beers are aged in spirit barrels and should have a harmonious blend between the barrel characters (typically vanilla and toasted oak), the barrel spirits and the base style. Imperial stouts are noted for strong, rich chocolate and roasted malt flavors, black color, full body and smooth mouthfeel. Dragon’s Milk Triple Mash clocks in at a whopping 17% ABV!
Dragon’s Milk Triple Mash pours pitch-black in color, is completely opaque, and has a small brown head that fades quickly. The aroma is of strong roasted and chocolate malt with light plum and prune esters; very strong bourbon and toasted oak notes complement the dark malt aromas. The flavor features strong chocolate and roasted malt elements. Boozy bourbon with lighter toasted oak and a slight sweetness are major flavor components. The beer finishes moderately bitter with a light sweetness and significant warmth. Strong roasted and chocolate malt flavors linger into the finish alongside strong boozy bourbon and toasted oak with vanilla.
