We spoke with New Realm Brewing Brewmaster and Co-Founder Mitch Steele about Hold On Juicy.
BC: Who came up with this beer’s recipe?
The bones of this beer started with our #1-selling beer, Hazy Like A Fox IPA. We used a new, exciting yeast strain, made it higher alcohol and adjusted some of the grains and hop rates to account for the 9% alcohol.
BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
I like that it is so easy to drink, yet still has a ton of flavor. I call beers like this “dangerously drinkable.”
BC: Where does this beer’s name come from?
We decided to start a music-themed series of DIPAs in 2023. So each of the 4 DIPA beers we are planning to release in 2023 will have a music-themed name. This is the first, and I believe our marketing team came up with the name after reading a description of the beer.
BC: Is this your “desert island beer?”
I really don’t have a desert island beer. I like too many different beers and styles.
BC: Can you describe this beer in 10 words or less?
Hazy fruity goodness, wonderful hop aromatics, cosmic punch.
BC: Do you know a story – or have a personal story – that revolves around this beer?
We had a lot of fun by including Cosmic Punch yeast for the fermentation. Cosmic Punch is a “thiolizing” yeast, meaning that it has the ability to free up lots of bound thiols in the malt and in the hops that become strongly aromatic when the bonds are broken. The result is a release of huge tropical fruit flavors during fermentation. It was amazing to watch these flavors develop more during each day of fermentation.
BC: What's a good food pairing for this beer?
Despite being a big beer, Hold On Juicy pairs exceptionally well with lighter, fruit-forward dishes, salads and seafood. It also has enough flavor depth to pair well with sandwiches and artisan cheeses.
