BC: Who came up with this beer’s recipe?
I created this recipe, but the entire staff works tirelessly to maintain our high standards for quality and consistency. Not just our brew staff, but our excellent bartenders, servers and managers, who serve each pint with love, deserve credit as well. The entire team earned the feedback we have received with this beer.
BC: What’s your favorite aspect of this beer (flavor, aroma, etc.)?
My favorite aspect of this beer is its drinkability. The Saaz and Hersbrucker hops play really well together to give you a fresh and complex aroma that complements our Pilsner malt. The bitterness is not overwhelming but is rather just enough to keep you reaching back for another sip. We are proud to say that due to its demand, we have brewed this beer 18 times since opening in October 2020; it is our most popular brand.
BC: Where does this beer’s name come from?
The name of this beer comes from the town that we are located in. The people of Thomaston are so good to us that we wanted to name it after them.
BC: Is this your “desert island beer?”
Personally, this is definitely my "desert island beer." It is light enough to have a few pints of, but it has a complex array of aromas and flavors that any true beer drinker can appreciate.
BC: Do you know a story – or have a personal story – that revolves around this beer?
A personal story about this beer: This recipe was originally designed in my basement years ago. However, it has gotten a serious facelift over time especially as I grew as a professional brewer. We at Clocktown continually make little improvements over time, from our water to our brewing practices, in order to make this a force to be reckoned with within the Pilsner style.
